PAI’S GREEN CURRY IN A COCONUT:
In 2003, we opened our first restaurant in Thailand. Chef Nuit was such a master at making Thai curries, so we decided to name it “the Curry Shack”. With the name came the necessity to have a SPECIALTY curry. Chef Nuit and I thought a lot about it until we came up with the idea to serve our green curry in a freshly chopped young coconut! It easily became our most popular dish! It was so delicious, especially because you could scrape the young coconut meat and eat it with the curry! YUM!!! I remember selling out of coconuts all the time and having to jump on a motorbike in the middle of service, zipping through the town to get more just so we could keep up with the orders! This was the dish that reminded me of Pai Thailand the most! Every time we opened a new restaurant in Toronto we always wished we could add it to our menu but it was just too difficult and time consuming for our operations. When we finally opened Pai Toronto in 2014, we knew that we just HAD to make it happen! And we are so happy we did! We couldn’t imagine having a “Pai” without this dish!
Today we have a small team who has the very important task of just chopping coconuts for our dinner service! All night, every night! HUNDREDS a week! That’s how badly we want to share this dish with you😁
Now I’m imaging myself in the middle of winter, rushing back to the restaurant, lugging a hundred coconuts on a motorbike!🏍😆🤣😂 wouldn’t that be CRAZY???!!!

In 2011 Chef Nuit and I were working 8 days a week for the past few years! And one day, he pretty much forced us to take a night off to go to a Ben Harper concert... from that moment, we realized that we were still allowed to have a life:) Thanks Brother!!!

WATER BUFFALO SOLDIER
A couple weeks ago we were out with friends telling stories that we didn’t know about each other. When it was Nuit’s turn she says “oh I have one!” And in her child-like, super-charged, enthusiastic way she goes “when I was young I fell off a Water Buffalo...” We all started laughing! Not really because it was funny, but because it was so unexpected and just so foreign a concept to us.
How lucky are we to have so many people from other countries and cultures bringing their life stories and experiences to Canada? And then sharing them with us to learn, to grow and even to TASTE! Chef Nuit lived a childhood that was all about food! Hunting, farming, forging, fishing, cooking! From learning how to find Beetles under a pile of cow dung to cook and eat, to finding wild palm hearts in the jungle with her mom to cook and sell.
Selling food with her family was about SURVIVAL, and the game plan was always to make it so delicious that people couldn’t keep away! And now WE get to have all of this FIRST-HAND experience and knowledge brought right to our tables! It’s such a blessing! Diversity is one of the many reasons why I love Toronto so much!
Just through Chef Nuit alone, I’ve learned so many things! Like the foundation of REAL Thai food, insight of the struggles and joys of living a farmer’s life in Northern Thailand, and most importantly...
